Crispy Roasted Cauliflower Nuggets

It’s a fast, crispy, flavorful, and versatile side dish.

Ingredients

  • 1 head of cauliflower

  • 2 tablespoons of olive or avocado oil

  • 1 teaspoon of salt

  • 1/2 teaspoon of black pepper

  • 1/2 teaspoon of garlic powder

  • 1/2 teaspoon of paprika

  • 1/4 teaspoon of cayenne pepper

  • 1/4 cup of grated parmesan cheese

  • 2 cloves of minced garlic

  • Fresh parsley or thyme for garnish

Directions

  • Preheat oven to 450 F / 232 C.
  • Add a little oil to a large skillet and heat to medium-high.
  • Chop and toss cauliflower in large mixing bowl with a little oil and seasonings of choice.
  • Sear cauliflower in the skillet on the stovetop for about 5 minutes to get a crispy, browned exterior.
  • Carefully transfer skillet to the preheated oven and bake on the center rack for 10-15 minutes, stirring every 5 minutes to ensure even cooking, until the cauliflower is golden brown and cooked through.

Notes

  • Crispy on the outside, tender on the inside. The sear first and then roast method speeds up cook time and gives a cook more control over the final texture.
  • The recipe is very customizable. Garnish instead with cilantro and slivered almonds and add a drizzle of fresh tahini. Make a dipping with 1/2 mayonnaise and 1/2 ketchup.
