Crispy Roasted Cauliflower Nuggets
It’s a fast, crispy, flavorful, and versatile side dish.
Ingredients
1 head of cauliflower
2 tablespoons of olive or avocado oil
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of garlic powder
1/2 teaspoon of paprika
1/4 teaspoon of cayenne pepper
1/4 cup of grated parmesan cheese
2 cloves of minced garlic
Fresh parsley or thyme for garnish
Directions
- Preheat oven to 450 F / 232 C.
- Add a little oil to a large skillet and heat to medium-high.
- Chop and toss cauliflower in large mixing bowl with a little oil and seasonings of choice.
- Sear cauliflower in the skillet on the stovetop for about 5 minutes to get a crispy, browned exterior.
- Carefully transfer skillet to the preheated oven and bake on the center rack for 10-15 minutes, stirring every 5 minutes to ensure even cooking, until the cauliflower is golden brown and cooked through.
Notes
- Crispy on the outside, tender on the inside. The sear first and then roast method speeds up cook time and gives a cook more control over the final texture.
- The recipe is very customizable. Garnish instead with cilantro and slivered almonds and add a drizzle of fresh tahini. Make a dipping with 1/2 mayonnaise and 1/2 ketchup.
